I don't miss them at all and haven't been this 'skinny' since getting married -- 7.5 years ago. At the end I'll be pre-cancer weight again

You would be amazed. Just replace it with bacon, butter, cheese, meat, bacon, fresh veggies sauted in bacon grease, bacon, and salads with eggs, cheese, and meat...
For real. I've come to appreciate how bacon in everything makes everything taste better. There's a whole world of salted, dried meats I was told I shouldn't eat that I can finally binge on. And eggs, and butter - oh the eggs and butter. It's one of the most unintuitive things I've dealt with because of what I've always been taught about food, but going sub-200 for the first time in ~14 years tells a different story entirely. And don't forget about the double heavy cream + cheese/cheese sauce on vegetables. I don't know how I'm losing weight eating this stuff, but it must be all the cauliflower and cabbage sides to cheese.
I have had a major set back the last month on processed food--- I have also been giving plasma for extra cash, which seems to lead me to over-eat. Eating whole foods with very little white flour and sugar do make me feel better, and I also lose weight. I cannot skip the beans-- love them- and I need good carbs because of activity and just the way my body is, I guess. I did once lose a lot of weight on an Adkins type diet, and I celebrate with you for your lifestyle changes that are helping you.
