    Latest in home cooked less than healthy winter comforts, fairly easy chicken pot pie. I need to hurry up and freeze the leftovers before I eat them.

    How to make amazing Macroni & Cheese

    Everyone loves a little Mac&Cheese right? Sure, so here's a simple macaroni cheese recipe that will serve 4 people in 1 hour. This is just plain old Mac&Cheese so feel free to throw in some of your personal favourites like crispy bacon.

    What you'll need
    250g macaroni
    1 onion, very finely chopped
    For the cheese sauce:
    50g butter
    50g flour
    900ml milk plus extra if needed
    225g mature Cheddar
    1tsp English mustard (optional)


    How to make it
    • Add macaroni to a large pan of boiling, salted water and cook for 12-15 mins until tender. Drain, then tip back into pan with a little cooking water and toss to coat. Put to one side.
    • Preheat oven to gas mark 6/200°C (180°C in a fan oven).
    • To make the cheese sauce, melt the butter in a pan, remove from heat and stir in flour until blended, add a little milk and stir. Put pan back on heat and slowly add milk, stir until thick, then whisk until smooth.
    • Remove from heat and stir in grated cheese and mustard if using and season with sea salt and freshly ground black pepper. Stir until cheese melts, taste and season as needed. Add more milk if sauce is too thick.
    • Add raw onion to the macaroni and stir well, then add most of sauce (reserving some for top) and stir well so each piece of pasta is covered.
    • Spoon mixture into a dish or dishes, then spoon remaining sauce on top. Sit on a baking sheet and put in oven for 15-20 mins until golden. Remove and serve with a tomato salad.

    We also make two more versions of this. One version with pineapple pieces, another with a touch of pizza sauce thrown in. In Version two, We also add corn, Jalapeno, Bell peppers etc too.
